SOURCING Not too much going on for this one, but you will need long grain glutinous rice (长糯米): Amazon: 🤍 Weee: 🤍 For the syrup, the optional dried rose: 🤍 🤍 For the mango bingjiang, choose a very ripe mango. PREPARING THE STICKY RICE If your rice cooker has a sticky rice function, feel free to use that. Alternatively, soak the rice for a half hour, then cook in the rice cooker together with ~10% more water than your rice cooker calls for. Note that this is not a general technique for cooking sticky rice - because we're blending this all up, the rice texture simply doesn't matter as much as it would for, say, Lo Mai Gai. In the video, we cooked 100g of sticky rice - good for about three bingjiang. Feel free to scale up according to the number of bingjiang that you're making. TO MAKE THE SYRUP: * Jaggery, slab sugar (片糖), or dark brown sugar, 120g * Water, 240g * Dried rose buds (玫瑰花茶), ~5 Melt the sugar into the water, and cook it down over a medium flame, ~10 minutes. Add the optional rose buds, and cook that down for ~5 minutes more, until syrupy. CUCUMBER AND MILK BINGJIANG Per Bingjiang: * COOKED sticky rice, 60g. Remember that this is the quantity of *cooked* rice. So like... once your rice is done cooking, break out the scale and portion out this 60g per shake. * Milk, 60g * Milk powder (奶粉), 1 tbsp * Cucumber, 60g. Peeled and chopped. * Ice, 240g * Sugar, 1.5 tbsp ฺBlend together all the ingredients except the sticky rice, ~1 minute. Add the sticky rice, blend for ~30 seconds more. For each shake, top with * Toasted (or roasted) peanuts, chopped, ~1/2 tbsp * Toasted sesame seeds, ~1/2 tbsp * Syrup from above, ~1-2 tsp MANGO BINGJIANG * COOKED sticky rice, 60g. Remember that this is the quantity of *cooked* rice. So like... once your rice is done cooking, break out the scale and portion out this 60g per shake. * Mango, 120g. Chopped. * Ice, 240g * Sugar, 1.5 tbsp ฺBlend together all the ingredients except the sticky rice, ~1 minute. Add the sticky rice, blend for ~30 seconds more. Chinese companies are making toxic rice out of plastic China is mass producing plastic rice – and it causes some very serious health problems. China's Wuchang rice is extremely popular and well-known due to its fragrant smell and distinct taste – costing almost double the price of normal rice. With the demand for Wuchang rice so high, companies have start to exploit the opportunity and create fake rice which they sell for the same high price. It is thought that China has been producing this fake "Wuchang rice" for at least four years, recreating the popular product using potatoes, sweet potatoes and some poisonous plastic for good measure. It looks just the same as the real deal in terms of shape and size; however, the plastic remains hard after cooking and is seriously bad for your health. Dangerous of consuming plastic Eating just three bowls of this fake "Wuchang rice" is thought to be the same as consuming an entire plastic bag, causing serious and even fatal digestive issues, especially if consumed daily as is often the case. In fact, most people in China consume over half a pound of rice every single day, and recent health controversies have brought into light the question of whether or not it is safe to use plastic packaging in the food industry – let alone eat plastic rice! Research has found potentially serious health risks associated with bisphenol A and a class of chemicals called phthalates, commonly found in plastics. Bisphenol A has the ability to disrupt the functions of our hormones, particularly estrogen. It has been linked to effects on reproductive development in several animal studies. Meanwhile, phthalates are a group of "plasticizers" that are found in various products, despite having been banned in the EU since 2005. Phthalates can also disrupt hormones; however, unlike bisphenol A it is testosterone that is affected. Each of us likely has a detectable amount of both phthalates and bisphenol A in our bodies due to the contamination of food products that are stored in plastic containers. However, if consumed, the plastic rice in China will likely cause a massive increase in the levels of these dangerous chemicals. So far, there have been no reports of plastic rice in the U.S.; however, the fact that the rice was being exported and consumed outside of China draws into question whether or not countries are asking enough questions about their food sources before importing goods. Cooking rice is not a difficult process at all, but unfortunately there is a lot of bad information out there. Forget rinsing the rice in a sieve, or "fluffing the grains with a fork", or seasoning it with salt (lol). Asian people don't do any of this when cooking rice. This method works for lots of varieties of rice - Jasmine, Japanese short-grain, etc. - and you don't even need to measure anything. Wuchang is a county-level district of Harbin, capital city of Heilongjiang, the northernmost province of China’s Northeast region. The city is famous for its agricultural product, especially the extremely popular Wuchang rice. Wuchang is a semi-mountainous city covering a total area of 7,500 square kilometers. Its ground slopes from southeast to northwest. Though labour use in rice cultivation has been declining, wet rice is still one of the most labour-intensive crops in the world due to its massive requirement of human labor during different growing stages such as land preparation, transplanting seeding, growing and harvesting. Wuchang is a county-level district of Harbin, Harbin boasts one of the world’s three black lands that are suitable for rice planting. Thanks to the fertile soil, abundant sunshine and rain, Harbin has managed to develop a unique rice brand known to the whole of China and many parts of the world. The depth of Harbin’s black soil ranges from 40 to 100 centimeters, with rich organic matter resulting from the rotting of a large amount of leaves for thousands of years. Statistics reveal that the amount of precipitation in Harbin throughout the year ranges from 400 to 900 millimeters. Also, the Songhua River and its tributaries offer pollution-free irrigation water for the rice in the region. Thanks to the suitable climate, the rice maturity period can reach 135 to 140 days, in addition the significant temperature difference between day and night greatly facilitate the accumulation of nutrients and amylose in the rice. Wuchang has a very long history of rice cultivation. According to historical records, an emperor of the Qing Dynasty specified the rice grown in Wuchang for imperial use. Therefore, the Wuchang rice is also known as the Wuchang imperial rice.

The large pieces of pork chop were marinated well and juicy, and comes with pickled mustard greens and rice that has soaked up all the juices from the pork. Meat ball soup was a nice chaser (for lack of a better term) to cut the fattiness of the pork chop dish with balls of meat and clear broth. A Chinese television report has alleged that a company in Xi'an, Shaanxi Province, has been producing a fake version of high-quality "Wuchang rice" by adding flavoring to ordinary rice.
